Miniature Pizzas

Halves of English muffins on cookie sheet, toast under broiler until edges are browned, lightly butter.

-On each half, add one tablespoon tomato sauce, salt and pepper.

                Optional: powdered oregano, dash garlic powder or salt, olives, salami, mushrooms.

-Add grated mozzarella.

Bake at 425° for ten minutes


Caesar Salad

Romaine                                              croutons

Anchovies (2-3)                                parmesan ¾ cup

1 egg                                                     lemon juice 2 T

olive oil ¾ cup

Break up romaine-put in bowl. Put garlic in olive oil, several croutons in frying pan with garlic and olive oil. Small bowl-mash anchovies, add egg, beat with fork, add lemon juice. Lettuce in bowl-add garlic oil, salt, and pepper. Also add egg + anchovies, parmesan, mix and taste. Add croutons when done.


Honey Brushed Chicken Thighs

2 t garlic powder                                               2 t chili powder

1 t salt                                                                   1 t ground cumin

1 t paprika                                                           ½ t ground red pepper

8 skinless boneless chicken thighs            2 t cider vinegar

honey

Preheat boiler, combine first six ingredients in a bowl, add chicken and toss to coat. Put the chicken in broiler pan, broil five minutes on each side. Combine honey and vinegar, remove chicken from oven, brush half of each thigh with honey on the chicken and broil one minute, turn over and brush with honey and broil for one minute.


Apple Pie

6-8 peeled and sliced apples                       1/3 cup brown sugar

1/3 cup white sugar                                        2 T Flour

½ t cinnamon                                                     ¼ t nutmeg

¼ t salt                                                                  lemon juice

butter                                                                   buy shell

mix everything except butter, mix with apples, let stand ten minutes, pile higher in middle, butter on top. Seal top of crust and roll up. Bake on cookie sheet, slits on top, bake 425° for 40 minutes until juice bubbles, cover with foil if too brown.


Breakfast for Dinner Hash

1 bag diced frozen potatoes (small cubes)                            oregano

chopped onion                                                                 red pepper

Heat 2 T oil in frying pan, add potatoes, onion, oregano, salt, and pepper. sauté for 20-25 minutes.


Popovers

1 ¼ cups flour                    ¼ t salt

3 eggs                              1 ¼ cup milk

1 T oil

Preheat oven to 350°. Fill cupcake pans ½ full, put in oven, turn up to 450° and cook 15 minutes, reduce to 350° and cook 20 minutes more.


Hot Cider

¼ cup lemon juice                            3 cups of water

½ cup honey                                      12 whole cloves

pinch of ginger                  2 gallons cider

1 ½ cup of orange juice

Do ½ recipe (crock pot holds ¾ gallons), cook water, honey, and spices for one hour. In another pot cook cider and juices until boils, add juices and spices, serve.


Linguini with clams (2 people)

2 large whole cans of clams         tomatoes (optional, if use then deseed)

2 minced shallots                             lemon juice

garlic/white wine                             lemon pepper

chopped parsley

sauté shallots and garlic in olive oil, add clams and cook it down (thickens), add lemon juice, lemon pepper, salt, wine, and tomatoes. Serve over pasta.


Spaghetti Sauce

 

1 onion                                 ½ tsp salt

(optional 3 lbs                    ¼ tsp pepper

hamburger meat)                            ½ tsp chili power

2 cans tomato sauce                       pinch of oregano, sweet basil

1 can whole tomatoes                   ½ tsp garlic salt

cook burger and onion in skillet, add all ingredients, cook one hour (or more) adding more liquid (water) if needed


Stuffed peppers (serves 6)

6 green peppers               salt, pepper, garlic, Worcester sauce

1 lb ground meat              ¼ cup lemon juice

½ cup cooked rice            3 T brown sugar

1 chopped onion              ½ pkg pureed, 1 can pureed tomatoes

stuff the peppers (don’t cook the meat), put into pot and pour tomatoes over, cover, and bake for 2 hours @ 325 °.
